Italian Week: Salsa Verde Recipe

Salsa Verde


3 Anchovies;
120g Parsley;
2 Eggs;
80g Breadcrumbs;
2 cloves of Garlic;
Capers (optional);
50g White Vinegar;
150g EVOO;
Salt and Black Pepper.


To start, boil the 2 eggs for about 8-9 minutes. Once they are completely boiled, let them cool down before taking the shell off. Then sieve the egg yolks only in a bowl
Take the breadcrumbs and let them soak for around 10 minutes in white vinegar. In the meantime, peel and chop very finely the garlic cloves together with the anchovies filets creating a sort of pesto;

Then take the parsley, wash and dry it properly before chopping it very finely;

Add the garlic and anchovies pesto in a bowl with all the ingredients. Then add olive oil, salt and pepper and keep mixing all the ingredients very well together. Leave your salsa verde to rest for a couple of hours at room temperature before enjoying it with anything else you like!
